Bubble tea, called Boba tea, probably originated in Taiwan. Asian restaurants around the globe have started offering it, and it has captured attention in Maine. The balls or boba are made from tapioca. The knack of getting the balls cooked just right is a skill. Not too soft and not too hard, just chewy enough.
